Pintxo, or pincho in Spanish, literally means spike and refers to the toothpick that holds the ingredients together. Did you know that the pintxo was supposedly invented in the 1940s in San Sebastian? The first pintxo consisted of three ingredients on a skewer: guindilla peppers, an anchovy, and an olive. The pintxo is called Gilda and is named after the main character from the American film noir Gilda. Just like the pintxo, the character of Gilda in this movie is green, salty, and a little spicy.
